These three healthy crockpot recipes for weight loss each make six bowls of 271 to 284 calories, built on a lean protein, beans or a whole grain, and plenty of vegetables. Load the pot in the morning, thaw any meat first, and dinner cooks itself while you do something else:
| Recipe | Protein | Per bowl (6 servings) |
|---|---|---|
| Chicken, sweet potato and black bean stew | Chicken breast and black beans | 282 calories, 32 g protein |
| Red lentil and chickpea curry with spinach | Lentils and chickpeas | 271 calories, 17 g protein |
| Beef, mushroom and barley soup | Lean eye of round and barley | 284 calories, 34 g protein |
What if the slow cooker did more than braise a fatty roast? Same machine, one twist: fill it with lean cuts, a can of beans or a bag of lentils, and enough vegetables to make a bowl feel generous. That is the whole idea behind these three. Each one makes six bowls, sits between 271 and 284 calories, and keeps for lunches. None of them is a weight-loss fix. They are simply filling, balanced dinners that cook themselves, which is often the part of a plan that falls apart on a Tuesday night.
Healthy crockpot recipes for weight loss: what trials on beans, protein and fullness found
Trials on slow cooking itself and body weight do not exist; the pot is just a pot. What has been studied is what goes in it. Here is what four reviews found on PubMed, and where each one stops.
- Beans, lentils and chickpeas, and body weight. A 2016 meta-analysis pooled 21 randomized trials with 940 adults (PMID 27030531). Diets with pulses, a median of 132 g a day or about one serving, came with 0.34 kg more weight loss than comparison diets over a median of six weeks. The authors call it a modest effect and ask for longer studies.
- Pulses and fullness after a meal. Pooling nine short feeding trials, a 2014 meta-analysis (PMID 24820437) found 31 % more satiety after meals with pulses than after meals of the same calories without them. People did not eat less at their next meal, though, and the trials were small.
- Fiber is not a magic word. A 2013 systematic review of 44 publications (PMID 23885994) found that only 39 % of the fiber treatments tested reduced appetite, and 22 % reduced how much people ate. Most fibers did nothing measurable in the short term.
- Higher-protein meals. A 2004 review of randomized studies (PMID 15466943) judged the evidence convincing that more protein increases satiety and the energy used to digest a meal, compared with lower-protein diets. Greater weight and fat loss showed up in some trials but not consistently, and the authors suggest swapping refined carbohydrate for protein foods low in saturated fat.
So the honest reading for healthy crockpot recipes for weight loss is small but useful: a daily serving of beans and a solid portion of lean protein help a meal hold you longer. The calories in the bowl still decide the rest.
Healthy crockpot chicken breast recipes for weight loss: chicken, sweet potato and black bean stew
My twist here is smoked paprika and lime: smoky and bright at the same time, so lean chicken breast never tastes plain. The sweet potato sits at the bottom, where the heat is strongest, and melts into the sauce.
Serves 6. Prep 15 minutes. Cook 3 1/2 to 4 1/2 hours on low.
Ingredients
- 3 cups (400 g) peeled sweet potato, in 3/4-inch (2 cm) cubes
- 1 large red bell pepper (150 g), in strips
- 1 medium onion (110 g), sliced
- 3 garlic cloves, minced
- 1 can (15 oz) black beans, drained and rinsed, about 1 1/2 cups (255 g)
- About 1 2/3 cups (400 g) canned crushed tomatoes, half of a 28-oz can
- 1 cup (240 ml) low-sodium chicken broth
- 2 teaspoons paprika, smoked if you have it
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 1 1/2 lb (680 g) boneless skinless chicken breast, thawed
- 2 tablespoons lime juice
Steps
- Vegetables first. Put the sweet potato, pepper, onion and garlic in the slow cooker. USDA advises putting vegetables in first, because they cook more slowly than meat.
- Add the sauce. Stir the beans, crushed tomatoes, broth, paprika, cumin and salt together over the vegetables.
- Chicken on top. Lay the whole chicken breasts on the sauce, put the lid on and cook on low for 3 1/2 to 4 1/2 hours. Keep the lid closed, opening it only to check doneness. The chicken is done when the thickest part reads 165°F (73.9°C) on a thermometer and the sweet potato is soft.
- Shred and finish. Lift the chicken onto a board, shred it with two forks and stir it back in with the lime juice. Taste for salt.
Per bowl: about 282 calories, 32 g protein, 31 g carbohydrate, 4 g fat, 584 mg sodium.
What to change if you prefer chicken thighs: they stay juicier on long cooking but add fat, so the numbers above no longer apply. Serve the stew as it is, or spoon it over a little brown rice.
Crockpot red lentil and chickpea curry with spinach
No meat to thaw, nothing to brown: everything goes in at once. Red lentils fall apart as they cook and thicken the curry on their own, while the chickpeas keep some bite. The flavor combo is ginger, cumin and turmeric with a squeeze of lime at the very end.
Serves 6. Prep 10 minutes. Cook 6 to 7 hours on low, or 3 to 4 hours on high.
Ingredients
- 1 1/2 cups (290 g) dry red lentils, rinsed
- 1 can (15 oz) chickpeas, drained and rinsed, about 1 1/2 cups (240 g)
- About 1 2/3 cups (400 g) canned crushed tomatoes
- 1 medium onion (110 g), finely chopped
- 4 garlic cloves, grated
- 1 tablespoon grated fresh ginger
- 2 teaspoons ground cumin
- 1 1/2 teaspoons ground turmeric
- 1 teaspoon paprika
- 1 teaspoon salt
- 4 cups (960 ml) water
- 4 packed cups (120 g) baby spinach
- 2 tablespoons lime juice
Steps
- Load the pot. Put the onion, garlic and ginger in the slow cooker, then the lentils, chickpeas, tomatoes, spices, salt and water. Stir well so no lentils stick in a clump at the bottom.
- Cook until soft. Cover and cook until the lentils have broken down into a thick, golden curry. Stir once halfway if you are home, and add a splash of water if it looks too thick.
- Wilt the spinach. Stir in the spinach, cover again for about 5 minutes until it wilts, then add the lime juice. Taste and adjust the salt.
Per bowl: about 271 calories, 17 g protein, 49 g carbohydrate, 3 g fat, 632 mg sodium.
This is the bean-heavy bowl of the three: each serving holds about 48 g of dry lentils plus 40 g of chickpeas, close to the one serving a day of pulses used in the trials above. If beans are new to your plate, our high fiber foods guide explains how to add them gradually.
Make it your own: swap the spinach for chopped kale (add it 20 minutes before the end), or stir a spoonful of the curry into a bowl of brown rice for a bigger meal.
Slow cooker beef, mushroom and barley soup
Eye of round is one of the leanest beef cuts, and the low heat of a slow cooker is exactly what makes lean cuts tender: USDA describes the appliance as cooking between 170°F and 280°F, which helps leaner cuts become tender and shrink less. Mushrooms bring the deep, meaty taste a fattier cut would normally give, and the barley turns the broth into a meal.
Serves 6. Prep 20 minutes. Cook 7 to 8 hours on low.
Ingredients
- 3 medium carrots (180 g), sliced
- 2 celery stalks (80 g), sliced
- 1 medium onion (110 g), chopped
- 3 garlic cloves, minced
- 8 oz (225 g) white mushrooms, sliced
- 3/4 cup (150 g) pearled barley, rinsed
- 1 1/2 lb (680 g) beef eye of round, trimmed of visible fat, in 1-inch (2.5 cm) cubes, thawed
- 1 cup (240 g) canned crushed tomatoes
- 6 cups (1.4 L) low-sodium beef broth
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
Steps
- Build the layers. Put the carrots, celery, onion, garlic and mushrooms in the slow cooker, then scatter the barley over them.
- Add the beef and liquid. Add the beef, then pour the tomatoes and broth over everything and sprinkle in the oregano and pepper. There is no added salt: the broth brings enough.
- Cook low and slow. Cover and cook on low for 7 to 8 hours, until the beef is fork-tender and the barley is plump. USDA's minimum for beef is 145°F (62.8°C).
- Adjust and serve. The barley keeps drinking the broth, so loosen the soup with a little hot water if it gets too thick. Taste before you add any salt.
Per bowl: about 284 calories, 34 g protein, 30 g carbohydrate, 4 g fat, 708 mg sodium.
What to change if you need a gluten-free soup: barley is not gluten-free, so use the same weight of brown rice and add it for the last 2 hours only.
Healthy high protein crockpot recipes for weight loss: how the protein adds up
| Bowl | Protein | Calories | Sodium | Where the protein comes from |
|---|---|---|---|---|
| Beef, mushroom and barley soup | 34 g | 284 | 708 mg | Eye of round, barley |
| Chicken, sweet potato and black bean stew | 32 g | 282 | 584 mg | Chicken breast, black beans |
| Red lentil and chickpea curry | 17 g | 271 | 632 mg | Lentils, chickpeas |
MedlinePlus puts protein at 10 % to 35 % of the calories a healthy adult needs, and lists beans, lentils and lean beef cuts such as round among its protein sources (Protein in diet). It also notes that you do not need animal foods to get all the protein you need. The two meat bowls get close to half their calories from protein; the curry trades some protein for more beans. To lift the curry, serve it with a boiled egg on the side. If the gap between lunch and a slow-cooked dinner feels long, our high protein snacks for weight loss are small enough to fit between the two.
For a week of lunches, cook one pot on Sunday and one on Wednesday. If you like portioning everything ahead, our meal prep ideas for weight loss show how to plan containers around a cook day, and the white chicken chili from the list at the top adds a fourth slow cooker option.
Crockpot safety, from the fridge to the leftovers
USDA's Food Safety and Inspection Service (Slow Cookers and Food Safety) gives a short list that applies to all three recipes:
- Thaw first. Always thaw meat or poultry before it goes into the slow cooker, and keep cut meat and vegetables in the fridge, stored separately, until you load the pot.
- Lid on. Keep the lid in place, lifting it only to stir or check doneness. You can start on high for the first hour if you are home, but cooking on low the whole time is safe too.
- Power cuts. If the power goes out while you are away, throw the food away even if it looks done.
- Leftovers. Refrigerate them in shallow covered containers within two hours. Do not reheat them in the slow cooker: bring them to 165°F (73.9°C) on the stove or in the microwave first.
The internal temperatures above come from the USDA Safe Minimum Internal Temperature Chart: 165°F (73.9°C) for all poultry, 145°F (62.8°C) for beef.
Allergens and swaps: the beef soup contains barley (gluten) and celery; check the label of your broth for other allergens. A note on weight: if you are losing weight with a medical condition or while taking medication, ask your doctor or a registered dietitian what calorie and protein targets suit you.
Where the numbers come from
- Nutrition: each recipe was calculated ingredient by ingredient from USDA FoodData Central, with raw weights, among them chicken breast, canned black beans, red lentils, canned chickpeas, beef eye of round, pearled barley and reduced-sodium beef broth. Turmeric and black pepper are too small to count, so every total is an estimate; brands of broth and canned beans change the sodium most.
- Studies: PubMed searches on November 4, 2026 for meta-analyses, reviews and trials on pulses, dietary protein and fiber with satiety and body weight. We read the abstract of each study cited.

Frequently asked questions
Can you put frozen chicken in a crockpot?
No. USDA's Food Safety and Inspection Service says to always thaw meat or poultry before it goes into a slow cooker. Thaw the chicken in the fridge the night before, and keep it there until you load the pot.
Can I reheat leftovers in the slow cooker?
USDA does not recommend it. Reheat the stew, curry or soup on the stove, in the microwave or in the oven until it reaches 165°F (73.9°C), and only then use a preheated slow cooker to keep it hot, at 140°F (60°C) or above.
What are simple healthy crockpot recipes for weight loss?
The red lentil and chickpea curry on this page is the simplest: no meat to thaw, everything goes in at once and the spinach is stirred in at the end. The chicken and black bean stew needs only ten minutes of chopping.
Are crockpot meals good for weight loss?
A slow cooker does not change how many calories a dish has; the ingredients do. Meals built on lean protein, beans and vegetables, like these three at 271 to 284 calories a bowl, make a lower-calorie plan easier to cook, but no recipe causes weight loss by itself.
What happens if the power goes out while the slow cooker is on?
If you were not home, USDA says to throw the food away, even if it looks done. If you are home, finish cooking it right away another way, on a gas stove or a grill. Food that was fully cooked before the outage stays safe up to two hours in the cooker.
