Sugar-Free Jello Recipe: Homemade Gelatin With Raspberries and Lemon
A homemade sugar-free jello made from unflavored gelatin, lemon and raspberries, with no added sugar and no sweetener unless you choose one. What gelatin can and cannot do for fullness and weight.
Ingredients
- 2 envelopesunflavored gelatin, about 1/4 oz (7 g) each
- 1 cupcold water
- 1 cupboiling water
- 2 tbsplemon juice
- 1/2 cupfresh raspberries
- sweetener of your choice, optional, to taste
Instructions
- Bloom the gelatin. Pour the cold water into a bowl, sprinkle the gelatin over the top and leave it for five minutes until it looks wrinkled and soft.

- Dissolve. Pour in the boiling water and stir for a minute or two until no grains remain. Stir in the lemon juice and any sweetener.

- Fill the cups. Divide the raspberries among four small cups or jars and pour the gelatin mixture over them.

- Chill. Cover and refrigerate until set, at least four hours or overnight.

Notes
- Fresh pineapple, kiwi, papaya and fig contain enzymes that stop gelatin from setting. Cooked or canned versions work.
- Gelatin is an animal product, so this recipe is not vegetarian or vegan.
- If it has not set after four hours, give it more time. If it is still runny, you can warm it gently until liquid, stir in more bloomed gelatin and chill it again.
