Healthy Pumpkin Bread Recipe With Less Sugar: Moist, With Whole Wheat
A moist pumpkin bread made with canned pumpkin, part whole wheat flour, Greek yogurt and maple syrup instead of a cup of sugar, with USDA numbers for every slice.
Ingredients
- 1 cupall-purpose flour, 125 g
- 3/4 cupwhole wheat flour, 90 g
- 1 tspbaking soda
- 1/2 tspbaking powder
- 1 1/2 tspground cinnamon
- 1/2 tspsalt
- 1 cupcanned pumpkin puree, 245 g, plain puree, not pie filling
- 2 largeeggs
- 1/2 cupplain greek yogurt, 120 g
- 1/2 cupmaple syrup
- 1/4 cupolive oil
- 1 tspvanilla extract
Instructions
- Prepare the pan and the ingredients. Heat the oven to 350°F (175°C). Line a 9 x 5 inch (23 x 13 cm) loaf pan with parchment paper, leaving a little overhang on the long sides. Measure everything first, so the batter goes together quickly.

- Mix the dry and the wet ingredients. In a large bowl, whisk both flours, the baking soda, baking powder, cinnamon and salt. In a second bowl, whisk the pumpkin, eggs, yogurt, maple syrup, olive oil and vanilla until smooth. Pour the wet mixture into the dry one and fold with a spatula just until no dry flour is left.

- Fill the pan and bake. Scrape the batter into the pan and level the top. Bake for 50 to 55 minutes, until a toothpick in the center comes out with a few moist crumbs but no wet batter. Cool in the pan for 15 minutes, lift out by the parchment and cool on a rack for another 15 minutes before slicing.

Notes
- Use plain canned pumpkin puree. Pumpkin pie filling already has sugar and spices, and it changes the recipe.
- The bake time is a range: ovens differ, so trust the toothpick more than the clock. Cover the loaf loosely with foil if the top browns before the center is set.
