Healthy Lasagna Soup Recipe: One Pot, With Noodle Tips
All the flavor of lasagna in one pot of soup, made with lean ground turkey, spinach, whole wheat noodles and a spoonful of cottage cheese, with USDA numbers per bowl.
Ingredients
- 1 tbspolive oil
- 1 mediumonion, chopped
- 3 clovegarlic, minced
- 1 lblean ground turkey, 93% lean
- 3 cupcrushed tomatoes, a little less than one 28-ounce can
- 4 cuplow-sodium chicken broth
- 1 tspdried oregano
- 1/2 tspsalt
- 2 cupwhole wheat lasagna noodles, dry, broken into 1-inch pieces, about 180 g
- 4 cupbaby spinach, loosely packed
- 3/4 cupplain cottage cheese, 2 tablespoons per bowl, for topping
Instructions
- Brown the turkey with the onion. Heat the oil in a large pot over medium heat and cook the onion for 5 minutes. Add the turkey, break it up with a spoon and cook for 6 to 7 minutes until no pink is left. Stir in the garlic, oregano and salt for 1 minute.

- Add the tomatoes and the broth. Pour in the crushed tomatoes and the broth, bring to a boil, then lower the heat and simmer for 10 minutes so the flavors come together.

- Cook the noodles and wilt the spinach. Add the broken noodles and simmer for the time on the package, stirring often so they do not stick, until tender. Stir in the spinach for 1 to 2 minutes until it wilts. Ladle into bowls and top each with 2 tablespoons of cottage cheese.

Notes
- The noodles keep absorbing broth, so the soup thickens as it sits. Add a splash of broth when you reheat it.
- For less salt, use low-sodium broth and taste before adding the 1/2 teaspoon of salt.
